So just to make sure, you're talking local multiplayer only?

There are these PC/DOS ports of arcade games called CHAMP-KONG, CHAMP Pac-em, etc that were pretty good and faithful and I believe they had those sort of options same as the NES ports did. Look up ChamProgramming it's easy to find.
