If you want to stay strictly within language-based entertainment (words, numerals, etc.), all I can really think of are interactive stories and word puzzles. If you're willing to make ASCII drawings with preformatted text, the possibilities open up a lot more. That's what many current Gemini games do, such as (shameless plug) my Gemini-based Rubik's Cube.

I loved playing forum mafia on the webdiplomacy forums. so much fun. The game is 100% text based, and would work pretty well in this format/protocol. You'd have to figure out how to set up a decently usable forum experience, and mayybe find a way to do word/paragraph/post counts, along with scraping the forum for certain commands (like #vote {playername} and so forth).
