🍗 Super crispy wings at home

(2026-02-09)

I saw a post on YouTube on how to make crispy wings at home, I tried it - and it was a hit!

The core to making anything crispy is reducing moisture. Moisture is the enemy of crispyness.

So first, dry the wings with a paper towel as best as you can.

Next toss the wings in a mix of salt, corn starch, and baking powder. I just kind of winged it.

Then you arrange the wings on a baking rack + sheet, and leave them in your fridge overnight, uncovered.

The next day the wings should be noticeably dry on the outside. You can them throw them in an oven at 450, or in my case an air fryer at 400. The video I saw was something like 40 minutes, but I did the air fryer for 20 minutes and they came out great. I probably could have left them in a few more minutes to get a bit more crisp.

It definitely takes some planning but - I'm doing weight watchers, which means I'm planning out meals anyway. I'm not ever just going to casually have wings - I gotta budget my points!
