Water bath canning first attempt

Yesterday I made my first attempt at water bath canning. 3 pounds of red onions turned into eight 1/2 pints and all of them made the magical *ping* sound. Now to wait a week and see how they turn out after the flavors develop a bit.

I'm excited to add them to a ton of things, especially the tacos I've been making. Recently I started making fresh tortillas directly from masa and the urge to build more of the ingredients for tacos from scratch has grown.

I should have mentioned pickled in that post! Done in vinegar with a small amount of pickling spices and garlic in the brine that I removed before canning. I don't think I'll need troubleshooting yet, but I'll try to remember to update this when I crack open the first jar.

You won't be disappointed later. The number one reason why seals fail is a failure to wipe rims after filling them. I've never had one fail on me over years of doing this.
