If you prefer a specific species, you need to harvest and start anew until you get lucky.

It's fine, I don't mind, but maybe after a few harvests I'll keep the same till I can.

You get money faster from the newer plants. But to get more money you have to shake the leaves more often, since there is a 100 coin cap on any one leaf shaking.
